As a chef, New Year's celebrations hold a special place in my heart – they are a beautiful blend of chaos and creativity, pressure and pleasure, tradition and innovation.

Each year, as we step into our kitchens adorned with festive decorations, there's a palpable excitement in the air. Our mission? To create an unforgettable dining experience that not only tantalizes taste buds but also encapsulates the spirit of new beginnings and joyful gatherings.

Crafting a New Year's menu is an exhilarating challenge. It's a dance between honoring classic holiday flavors and introducing novel, adventurous dishes. We source the freshest ingredients, brainstorm with our team, and spend countless hours perfecting each course.

From the delicate amuse-bouche to the show-stopping dessert, every dish tells a story – of dedication, passion, and the joy of bringing people together.

We started planning a month before. Selecting the kind of menus, to cudisines to planning on the set ups and kind of service suiting our audience. HK, FO,Service, Kitchen, Engg , Stewarding. All departments come together to ensure the 31st Night is one big hell of a night.

It's not just about the food. It's about the experience. Setting the ambiance, ensuring impeccable service, and seeing the smiles and hearing the laughter of guests as they indulge in our creations – these are the moments that make all the hard work worthwhile.

As chefs, we rarely join the countdown or watch the fireworks at midnight. Our New Year's Eve is marked by the clatter of pots and pans, the sizzle of pans, and the orchestration of a kitchen at full throttle. Yet, there's an unspoken camaraderie and a sense of pride that bonds us. We're not just cooking; we're creating memories.

To my fellow chefs and culinary professionals, as we gear up for another bustling New Year's celebration, let's take a moment to appreciate our unique role in this festive season. We have the power to make the last meal of the year memorable and to set a delicious tone for the year to come.
